The other day I had this great idea to make a Panini sandwich. I’ve been wanting to make one of these since last year’s trip to DC when I had a great Caprese Panini in a restaurant there. They are great and easy to make.
This sandwich is a slight variation of a classic Caprese. I added some grilled chicken to the sandwich.
Here are the classic ingredients: tomato, basil and mozzarella cheese. Simple, yet deliver it delivers in taste in a big way! Oh and the basil pictured here is straight out of the garden, fresh herbs are the way to go!
Beer is good! This was a leftover can from a recent smoked beer can chicken. It was still sitting on top of the grill the other night and I liked the way the light was hitting it from the setting sun.
